All fields not displaying for user edit

There are only 5 fields in my form.
Only two display for users to edit.
When the form is submitted the following error occurs:

There were errors with the edit you made.Post Category: Invalid selection. Please select one of the available choices.
—–The category drop-down does not appear. What am I doing wrong?
