Can I create a page that shows all products using one row widget on a main “all products” page?

It sounds like you need a slider that will show all products. I don’t have any specific recommendations, as there are many good sliders available:

Or I believe I deleted the auto created product categorie pages, can I recreate these in some way and use them?

WooCommerce dynamically creates product category pages, which are filled depending on the category that you’re looking at. There isn’t a way to delete those.
