Amend Loop Within Child Theme

Hello,

I’m looking to amend the actual loop of the rpwe_get_recent_posts function within my child theme to add an event date to the post title. I can do this by editing the $html within the plugin’s includes/functions.php, but what would be the best way to do this within the child themes functions?
