Ampersand encoding issue

My site title has an ampersand in it. When a user submits a data request they receive an email notification. In that email, the site title is displayed in the email subject and the “from” email address. In both cases, the ‘&’ displays as ‘amp;’. This issue however, does not occur in the message body itself.

Please can you look into this.
