I understand that you want to get the total sales per category including the tax and shipping on your site.
I checked under WooCommerce > Reports > Orders > Sales by Category, however, it also produces the Net Sales as well.

You could also check the premium plugin Product Sales Count for WooCommerce since it display Total Sales Count/Recent Sales Count for Products in Shop, Category, Tag and Single Product Pages in your WooCommerce Shop.
