“Archive” Category

Hi,

I am running a blog for a theatre group and intend to set up a category for every production.

I was wondering if, after a production has finished, it would be possible to edit its’ category / change its’ status so that while it is still viewable in the frontend, the category does not appear in the selectable list in the admin centre when writing a post?
