Hi,

You can set the defaults (page type and article type) for ALL of your posts and pages but there’s currently no option to set defaults for posts per category. You can learn more about it here — https://yoast.com/help/selecting-content-types-in-schema-settings/

We do have an example of a filter on how to change the article type specifically here. You’ll need to add use the wpseo_schema_<class> filter — https://developer.yoast.com/features/schema/api

Unfortunately, we can’t provide more custom code or help you with this as this is already outside the scope of our support. However, you are free to make modifications to the plugin as you see fit.
