However, the mobile score is very low. Please note I have enabled AMP for my site and cache on mobile devices (Hummingbird). Which setting am I missing?
I ran a Google Page Speed and could notice a score of 59 for Mobile and 99 for Desktop.
The maximum score that can be achieved entirely depends upon your theme and how it loads its assets. The current score seems to be high and the website seems to be optimized to its optimal setting.
The primary factor for a low score in mobile is “Reduce initial server response time”, please check the following screenshot:

Do you have cache enabled on the hosting provider side? It should help with improving the score regarding that. If it’s already enabled, then would highly recommend bringing it to your hosting provider’s attention to see if there are any other aspects that could be looked at to improve the server load.
The “Reduce unused JavaScript” seems to be pointing to 3rd party scripts like google ads, gtm etc which I’m afraid there isn’t much that could be done as they are loaded from an external server. The rest of the factors don’t seem to be affecting the score significantly.
Since you are also using AMP you could also try serving AMP pages instead of the default theme pages and see whether that improves the score further for Mobile. In general, AMP pages would be much faster, so you could also give that a try too.
