After adding default settings to a block, the settings apply to new instances of the block, not previous existing instances. However, you can copy and paste settings from one block to another. While default settings don’t apply to existing content, you can copy the styles from a new accordion/tab and apply them to existing instances. Beyond that, you could add global CSS, but this may cause unexpected style issues.
