It sounds like there were some uncaught errors… It could be a plugin conflict but it’s hard to tell…
Nothing takes 30 minutes to save… the issue is that something prevented the saving from completing and whatever error occurred is not an expected one so the save error handling didn’t catch it to let you know there was an error…
I’m very sorry that you’ve lost data here and I’d like to say “Do XY & Z and it’ll never happen again” but I don’t know what’s caused this in the first place so I don’t know what to tell you.
You can help me gather some additional information by recreating the error and that will allow me to harden the codebase to prevent it from happening again…

After that, try to recreate this error (the infinite saving). Watch the console for RED ERROR MESSAGES and if / when you see when can you screencap it or copy and paste it here for me, please.
