automatic update: Please put control back in my hand?

I realize it’s stupid to put two problems here, so I’ll put the more important one first.
WordPress ‘updates automatically’. I think this is Really Bad strategy. I back up before a major change. I don’t need to find out that my entire website was updated with no backup beforehand.
AND, the other day, my site was returning error messages. I could ping and tracert the site, but not see it. My provider thinks nothing happened. I think WordPress had it in ‘update mode’ without telling me.
This is unacceptable. Allow users to decide when an update will be effected. PLEASE.and (second problem)
I can’t seem to back- my ‘theme’. This new one puts Far Too Much grey space around the website pages. This is just Stupid. There should be NO grey space around web pages. User should be able to shrink page without having to leave grey borders.
Am I nuts? I think this is a waste of screen space.Separate responses will be OK.
