We are using the default PayPal-method which came with the first installation of WooCommerce. I think I remember reading somewhere that this payment-method is no longer a part of the default-WooCommerce-installation. I could be wrong about this though. All I know for sure is that we didn’t have to install an additional plugin for the PayPal-payment-method.

You are correct. PayPal standard has been hidden from new WooCommerce installations.

We strongly encourage everyone using PayPal standard to use the recommended PayPal Payments extension instead, which is our full-stack solution (credit card processing, PayPal checkout, subscriptions, pay later options, etc.)

For better support with WooCommerce, we recommend you work towards upgrading to PayPal Payments.

That said, could you follow the guide here to debug the order status issue? Ideally, if IPNs are working as expected, your order status should update appropriately.
