    It looks like you are not seeing the option to add a “Back in stock” date to your variable product, is this correct?

    Kindly note that this is not a built-in feature of WooCommerce core, and it would require either a plugin or custom code to achieve.

    If you would like to add this functionality, you can have a look at the WooCommerce Pre-Orders extension which allows customers to pre-order “out of stock” products and displays a customizable date when this product will be available. This supports both pre-orders charged up front and upon release:
