I have a lot of background images on my website (for desgin reasons), but didn’t include “classic” images. For some reason, the plugin doesn’t recognize these background images as images and tells me “No images appear on this page.” Why is that? And does that mean google doesn’t recognize these images either?

By default, the Yoast SEO plugin will only be able to identify if there is an image if it is added via the default WordPress editor (classic or Gutenberg). If you have content outside of that (such as in the header, footer, menus, etc.) then the plugin won’t be able to detect it. However, it doesn’t mean that Google won’t be able to prase or scan the complete content of your website.

It’s just that we recommend that you add images to enrich the content for your post or article. You can learn more about Image SEO here — https://yoast.com/image-seo/
