Basic issue with the "To" field in the E-Mail panel

Hi from France.
On the Form panel, I have this string :
[select destinataire “A|[email protected]” “B|[email protected]” “C|[email protected]” “D|[email protected]” “E|[email protected]”]
On the E-mail panel, I try to fill the “To” field and I have simply put : [destinataire]
But when I save, the field is marked with a syntax error.
It shoud be easy… but it’s not.
Any idea to help ?
