Do you want to remove the icon and show it like WooCommerce Order Statuses [ https://prnt.sc/L38wfPKl_3u6 ]?

Yes, this is correct, I do no have a use for the icon at the top centre of the Custom Order Status, so would rather it be like the default woo commerce order status.

You can add a custom order status icon code like “e200”. And then save it. After that, you will see a blank icon.
