Block Editor not saving changes

We have a long-running WordPress site, we would like to switch from using the Classic Editor to the Block Editor. To this end we have switched from our very old Theme to the Twenty Twenty Theme – but when we edit Pages/Posts with the Block Editor the changes do not appear to be saved – even though the editor reports that changes are saved e.g. a “Draft Saved” popup. We can use the Classic Editor to edit & save content as usual.
Things I have tried so far, without success:
- disabling all plugins
- using the TwentyTwenty theme
- Running the Health Check (reports no issues, other than “should use persistent object cache” and “remove inactive plugins/themes”)
- Emptying local browser cache
- Empting CloudFlare cache
- Checking for PHP errors logged (none shown)
- Checking for Browser console errors on the Block Editor page (none shown)
- Creating a new Page/Post as well as editing as existing Page/Post – this also does not save any changes, just shows as “Auto-Draft”

Does anyone have any ideas where I can look, or will we be stuck with the Classic Editor for the foreseeable??
