Block Widget problems

Gutenberg Widgets are not working correctly in my WordPress 2021 theme. Today, I looked at them in my widgets in my dashboard and on the theme customizer. Some have left on vacation…Will they come back? I didn’t remove them!! As you will see in my video of the customizer, I can’t add widgets. I can only add blocks.
I looked at directions in Widgets in WordPress. I have attached a Vidyard video that shows that my 2021 theme customizer looks nothing like the one shown in the directions. I have attached a Vidyard video of the WordPress widget directions, too, to show what it is supposed to look like. Wish mine did. Things would be so much easier.
I have thought seriously of going back to the classic widgets. However, I read in a tech blog, that if I did that, it wouldn’t be supported after Dec. 31, 2022 (an extension of a year) and I wouldn’t be able to get the Gutenberg widgets back.
I had absolutely no problem with the classic widgets. I could quickly ad or remove widgets. Life was good. I slept well. The Gutenberg widgets give me nightmares. I need help to make my widgets work.
