The correct sequence for moving it is to *first* change it in the admin panel (which will save the new location info to the database), and *then* move the files.

I’ve done this any number of times, and it works.

You might have to download a databasedump to see where WordPress considers the WP files to be. If it shows that they’re still in the original location, perhaps you can put them back there first, make the change in the admin panel, and then switch over.

Did excactly that, twice now, but again this error:

Internal Server Error

Looks like you have pretty permalinks enabled. Did you redo your permalink structure? Anytime you do something like this, you need to update your .htaccess file. I’d say your .htaccess is still set with the old blog configuration.
