Just use a seperate database or a different table prefix for each install if you’ll be using the same database.

Sure, just make sure that it’s in a different directory. For example, /blog/ and /blog2/, or /blog/ and /wordpress/, or /blog/ and /evil-monkey-of-cosmic-distruction/.
