can I make posts on pages other than the main page?

I am using WordPress as my CMS but I am trying to do four sites under one domain.
So I want four separate blogs. But it is looking like I am not permitted to make a “post” on a “page” inside my domain.
For instance:
My domain is onemanz.com
But my reviews of guitars and guitar related things need to appear as posts on the page onemanz.com/guitar.
My reviews, articles, news links relating to craft beers need to appear as posts on the page onemanz.com/beer.
And the actual homepage of onemanz.com needs to have a column for each subpage showing the most recent post.
Now, I realize I can just do all of this with tables and hyperlinks. But it completely removes the EZ post on the fly ability that WordPress provides.
Is WordPress set up to only ever allow a “post” to appear on the main page? Will I have to actually use four separate domains if I want to post as a blog on each of the separate topics?
