    My wp_wfConfig table seems to have become corrupted. I can’t save any options. I want to completely remove Wordfence and start over.

    Can I manually delete all wp_wf* tables (assuming phpMyAdmin will let me) without creating problems due to remaining wf-related rows in the wp_options table?

    Yes, if the Wordfence plugin is disabled, you can safely remove the wp_wf* tables. Wordfence should re-create the tables when it is reactivated, if they are all missing.

    I would back up the database first, even if you’re only removing the Wordfence tables. If your database uses InnoDB in a single file, it’s possible there is a bigger problem in your database, so fixing one thing may break another. If it can’t be fixed easily, you could delete the whole database and import your backup. (If you don’t do this often, you may want your host to help to be sure you don’t lose anything.)
