Can't add menu items, NOT due to items limit

Hi – I developed a site a couple of years ago and have been successfully editing the Appearance (Main) Menu all this time. Now, I can no longer add menu items. If I add something and hit “save”, the entire menu disappears. It happened the same day as the recent WP forced update, so perhaps it’s related??
My main menu just disappears completely. When I try to recreate the menu, it gives me an error that it has an invalid menu name even though I’ve tried a bunch of names.
I cannot undue this – I have to rollback my site to my backup version.
I have a the latest WP, the latest theme and all plugins are up to date. This problem happens even when I switch to one of the basic themes, so I don’t think it’s the theme’s fault.
I only have 20 menu items so I don’t believe this is due to too many items. Just to be sure, however, I have increased my max vars to 3000 as suggested in other posts. I installed the menu limit detection plugin and got no warning when I tried to add menu items.
THEREFORE, I don’t believe this has to do with the menu limits. But, what could it possibly be????? Please help!
