Can’t edit single event after migrating to 6.0

Hi! We have Events Calendar Pro and have been having many issues lately with series dropoff and single events in a series mysteriously disappearing. Thinking it might be connected to not performing the migration 6.0 (even though we had upgraded), I did that this past weekend.
I am not sure if the previous issues is resolved yet, but there is a more pressing issue I need help with now. I can’t figure out how to edit single events in a series. Previously, I would break them from the series, but I don’t see that available now. My “series” page in Dashboard shows the events as individual events with each date. If I open the event I want to edit from there, when I got to save, it asks if I want to edit the whole series or just this event and all the one after that. I just want to edit that one event.
I watched the Series video in the Knowledge base, but my Series page looks different than the one in the video, so I am not sure what to do.
Can anyone advise me on what I am doing wrong?
