Capitalization of Table Headings – Unwanted

Visited your site but not getting where exactly are you facing that issue. Please share a snapshot of the issue, so I can able to inspect that and provide you the solution accordingly.

The headings are defined in the block as “Botanical Name” etc

?Please try to add the below CSS code from the Appearance > Customize > Custom CSS, and check.

.wp-block-table.is-style-stripes th {
    text-transform: none;
}
