    I just created a Category for posts with about five subcategories. Made a post in the parent category and then one in the sub.

    I was expecting the display of categories to remain as alphabetical and then the subcategory underneath the parent with an indent or something to indicate the subset. That is the way it’s shown on:
    https://codex.www.ads-software.com/First_Steps_With_WordPress in the create categories section halfway down.

    I’m still using the default theme until I understand how things work.

    The document you’re referring to doesn’t take widgets into account and that’s what you’re using to display your categories.

    Go to Presentation -> Widgets in the Admin Panel. Next to the Categories item click the box that looks like a menu – in the dialogue that pops up make sure “show hierarchy” is checked.

    Save your options and reload your page – all should be well.
