Category List in 2 columns w/ "Others" Category at the end

I have a page that shows ~6 categories in a list at the top of my page. I have split this into two columns using code from this source. I am looking to incorporate some sort of code that allows me to assign the “others” category to display last in the list. It is currently in alpha order which is fine but lets suppose I want to do a custom order as well. Please don’t point me to the plugins that are out there for this function as I am aware of them but would prefer a custom solution. Thanks!
