Category list showing most recent 1-2 posts in each category

  • In my sidebar Category list, I would like to show the most recent post(s) in each category. Something like this:

    CATEGORIES
    Fruit
    ? Grapes
    ? Apples
    Vegetables
    ? Carrots
    ? Beets
    Animals
    ? Dogs
    ? Cats

    Is this possible? Thanks in advance for any ideas.
