CF7 not working after server move

Moved servers from Hostgator to a VPS. Email is working fine (POP, SMTP) with it’s own server (Postfix & Courier) and accounts & aliases set up and tested. Running Ubuntu 12 LTS, if that means anything.
But on my WP site, CF7 when you click on the ‘Send’ all you get is a spinning ‘wait’ animation and the message doesn’t send. I’ve temporarily fixed this by installing Configure SMTP but I really don’t want one more extra plugin. Weirdly I have CF7 on another VPS and never had this problem at all…then again I didn’t install my own email server on that, that’s probably still using bog standard sendmail.
What needs to be on the server for CF7 to work correctly? Looked through the FAQ but there isn’t any technical specs about any specific settings, programs etc. that need to be activated for the mail function to work. I saw that it’s not standard wp_mail… Is there a way I can test/log how WP > Email is (not) working?
A spinny thing isn’t that helpful…
