Change "Category Archives: Posts" breadcrumb to custom one

Hi, Is there a way to change the auto-generated breadcrumb in this page to a custom one?

The reason why i am trying to do this is because my blog page is not working. I have a static page as the home page (I want custom code to show instead of the posts) and for the blog page I selected the page named “blog”. As you can see, blog is not showing anything. I tried several things but at this point I think if there is a way to just change the breadcrumb in the post page I’ll just use that as my blog page and call it a day. Any suggestions?
