Change Excerpt Length

I’m finding that the list style for the plugin is great, however, the length of the excerpt is far too short. I cannot seem to find anything online that indicates how to change it, and I’ve attempted both plugin options and changes to the functions.php file to change excerpt length. Can anyone shed light on this? Thank you!
