There are in fact many ways you can do that.

If you want to let your visitors change their cookies preferences, you can add a button to your privacy policy with a class “fp_show_cookie_notice”. Classes can be added in the “advanced” section of every Gutenberg module.

Site administrators (and optionally other user roles) are normally not tracked (you can choose excluded roles in the “General settings” page). If you chose to exclude traffic of yourself or any other person with a link (more info in the “general settings” page) you can delete all your cookie preferences by clicking an “eye” icon in the bottom left corner of your website.
