Change Sender of booking confirmation email

Hello Community,

as i understand all the emails send to the shop owner are sent from the shop site/admin email adress by woocommerce default.
We now would really like to change this sender to the real customer, meaning the sender of the booking.
As we already found out this has to be done by “customizing the template or override the defaults via the hook woocommerce_email_header”.
Could anyone please tell me, how to do that?
