Change text used in emails

Hi, I have changed some text in the “to_student_rate_course_and_instructor.php” but this is not reflected in the email. It still uses the standard text.
I have renamed the file and linked to the new name in “EmailNotification.php” and the new text is used. This is fine but on plugin update I will need to replace it again. Am I missing something obvious? Thanks in advance
