    How change the color of the text post by category, and the color under the menu that appear in the demo example of this excellent template?

    need to save color in each category setting page wp-admin->posts->category->your category->edit color.

    to colorize menu, you need to save custom menu in wp-admin->appeareance->menus->location->primary
