Change who receives the emails

I build websites for clients so that makes me the master admin.
The emails need to go to my client. CF7 has a fit when the you put an actual email address in the in the To: spot, so how do I change [_site_admin_email] so it goes to the “editor” which is what I make most of my clients. Or just do a different admin?
