Changing Base URL of 3.0 Multisite Installation

We recently migrated all of the chapter sites associated with our non-profit association from Drupal to WordPress 3.0. Until now, the sites (powered by the multisite functionality in 3.0) have been in a staging area (e.g., chapters2.example.org) while the Drupal sites remained live (e.g., chapters.example.org). This weekend, I’m looking to reverse the sites and change “chapters2” to “chapters.”
Now, I’ve had HORRIBLE luck changing the URL of WordPress sites in the past – and that was even on the standard version of WP, not the multisite version. It never fails: something goes awry and I end up in a panic. Well, I’ve been reading up in preparation of the switchover and I can’t quite find all of the information I need.
If I’m not mistaken, if I had a standard installation of WordPress, I’d just update the URL in the Settings > General page, right?
Well, the URL option isn’t available in Settings > General and I believe this is because I’ve got multisites enabled. So, I would change the URL in the wp-config.php… but what else?

SINCERE apologies if this information is duplicated but I’ve literally scoured both these forums and the Interwebz in general for 6+ hours over the course of two days.
