Changing excerpt lengths in 4.4.1?

    The options I found to change the excerpt lengths in earlier posts did not work. I also tried several plugins, both tested and untested for this version of WP, and they gave odd results.
    For instance one tested plugin would show my full homepage on one visit and then only an excerpt on a return visit. Sometimes it would include a photo in the excerpts and sometimes it would not.

    How can I change the excerpt length in 4.4.1 so that it is longer and I would like it to show the first image too, if possible.

    I am using Colorlib’s theme “Sparkle” with a 2 column layout.
