Changing Headline Default Color

Hi there,
I would like to change the color of the headline so that it’ll be more visible right away. As you can see, the headline starts of black, then turns greyish when you hover over it. I would like it to start off white (#FFFFFF). I’m also thinking of changing the hover color. How do I go about doing those two?
Also, I’m using the plugin “Sticky Menu (or Anything!) on Scroll” to stick the header menu. When I scroll down, the headline’s in front of the menu. How do I make the headline go behind the menu?
Any help would be much appreciated.
