Changing the labels of the fields

Just to make sure we’re on the same page, are you talking about changing the placeholders within Stripe, as shown here?

But if possible, I would also like to change the CVC placeholder to 123.

Thank you for that screenshot! This is actually changeable with the Loco Translate plugin.

After installing it, go to Loco Translate > Plugins > WooCommerce and Edit Template across the top. Type in the words and they should show like so.
