changing the permalinks of product categories

hi, I am incredibly stuck…
I have a client who sells products to irish and uk hotels. the site itself is up and fine, but I had to buy a plugin to solve the sterling/euro debate… the solution seems to be forcing the permalinks to display as below, but I am lost as to how you go about changing the permalinks within a product category… (the site is under maintenance at the minute before I get another angry phone call)
i need to amend the product categories permalinks from the following
