My client likes your plugin, but doesn’t like the + that changes to an x, when the menu is opened. She feels that the x will be confused with the X to close the overlay.

I see that you have an icons option, but when I change it to a ^, nothing changes in the menu.

If your site has icon fonts, you can show the icons by using the icons class names.

    Example shortcode:
    [wpb_category_accordion taxonomy="category" iconclass="fa-solid fa-chevron-down"]

This question may be outside the scope of your answer. There are a number of sources for icon fonts. The theme has a subdirectory for Font Awesome. Can I assume that the whole library is available for use then?
