Charge upon Availability

Hi I am building a woocommerce site, and I am planning to buy and sell thems, my issue is after clients ordering some items sometimes some of them are not available to supply due to lack of production, unavailability, etc ..! But it’s a must for me to sell them and assure the payment. I want to get the payment first and once the item is not available should be able to refund or should hold on to the total fund and charge only after the delivery based on the real supply. I there any solution or workaround for this ? – Appreciate your assistance
