Codes for eMail posts

Hi,

I am looking at setting up the email account for blogging and would like to know which codes can be entered into an email for extra functionality, like:
*Categories
*Sub Catgories
*Delayed Post Time

etc etc
I know I have found something once before, but that typical situation where you put something somewhere safe so you can find it when you need it, has been lost!!

Much appreciate ANY help at all finding any codes that can be used within the email to do any of the above and more.
