How to know what the colors correspond to (text, title, etc.)

Great question. As a general rule the Base color will be the overall background of elements, and the Contraste color will be used for text.

In terms of customizing the colors of titles/heading and other elements I can recommend using Styles within the Site Editor to set those specifically.
