Yeah you can style/customize the RTE text color by adding this CSS:

<style>.usp-rich-textarea.wp-editor-area { color: red; }</style>

Then change red to whatever color you want.

I want users to be able to choose colors.

Yeah that’s probably doable using custom code, but it’s not something supported by the plugin.
