Contact Form 7: Saving inputs in multidimensional arrays

I am looking to use Contact Form 7 to help with digital content management and workflow for users. I have come across two critical issues/questions that are preventing me from doing this, could you help with any of these?

1. Is there a way to save inputs into multidimensional arrays?

2. Is there a way of retrieving variables from a multidimensional array, saving them into a new one-dimensional array and creating a select field that is populated with the content of this new array?

I notice that some PHP scripts aren’t processes by Contact Form 7, which makes this a bit of a challenge; but if one could manage to use Contact Form 7 in this way it would drastically help speed up web development and reduce incidents of human error.
