Ive tried every different date format, and for some reason every time I click to publish the date changes to the second screenshot which in return makes it the wrong format!

That’s definitely not quite right. The saved date is totally different. On my test site, this doesn’t follow the date settings in Settings > General. It seems like it always uses year-month-day.

It could be there is something filtering the date in an unexpected way. To narrow it down, I would suggest running a conflict test. This guide can show you how to do that.

If that’s not it, this could be an issue from the server. It may not be giving the date in a way that WooCommerce expects. You could try coping the site to your local computer using something like Locay by Flywheel and see if the same issue happens there.

Just concluded the conflict test, it looks like there’s a conflict with a plug-in called ‘awesome event booking’. Might have to do some designs to stop the conflict in the future!
