Create page showing one category

I have recently upgraded to WordPress 1.5 and am very interested in using the page feature. I was thinking of using it to create seperate pages that only show posts from a specific category with a distinct template. However, I have not been able to find a way to restrict the posts shown to a single category. I saw that a plugin exists to filter for the main page but would need something similar for my pages. Does anyone have any ideas?

I saw that you can create template files with the name category-x.php and these will get used instead of index. However, I like the idea of being able to edit a page inside of the WordPress admin interface instead of editing code outside of the tool.
