Creating a non-post page

Well, now I have 2 questions now that I’ve seen the list of versions.

1: I want to create a site map, but when I add a page, it automatically creates posts instead of just content. Can I add content without it showing up as a post? The About page is the same. It shows up as a post.

2: I notices as I started this new topic that I have a really low # version that isn’t even on the list. Is that my problem? Do the newer versions have more page options? Should I download the newer versions (where do I find the new ones)?
